Japanese Eggplant
The straight thin eggplants known as Japanese or Asian eggplant have thin delicate skins like Italian eggplant but the flesh is sweeter. These eggplants are slightly shorter than the chinese eggplant. Japanese eggplants are also known to maintain their skin color when cooked which is a quality that makes them unique among many other eggplant varieties.
